Hummus

Original Recipe from Palestine

 

Ingredients

250 gr chickpeas soaked well

200 gr tahini

Sea salt

2 cloves garlic, crushed

Juice of 2 medium lemons

Lukewarm water, only if the mixture is very thick

hummusHow to prepare

Rinse the chickpeas.

In a large bowl, soak the chickpeas for 12 hours at least in 2 1/2 liters of cold water, without salt, without soda.

The next day, drain the chickpeas and grind them in the multi adding tahini, garlic, fresh lemon juice and salt until the hummus is a velvety cream with rugged texture.

We serve the hummus in a small platter and we rinse it with olive oil and sprinkle with paprika, herbs, pine nuts and fresh tomato.

It has a delicious taste!
