A very easy recipe to prepare, given to Emvolos’ friends.
Leros – Hellas
Cinnamon braids with sweet wine and sesame
From the famous confectioner Mike Tachlampouri, Platanos Leros
Ingredients
250 gr herbal butter
250 gr sugar
250 ml sunflower oil
250 ml sweet red wine
1 tsp cinnamon
1,5 tsp baking soda
1 flat tsp baking powder
All purpose flour as much as needed
Place in the mixer bowl the vegetable butter and sugar and whisk vigorously.
Add the sunflower oil, the baking soda, wine and when the mixture becomes homogeneous, add the baking powder and little by little the flour beating slowly and steadily.
The amount is not so specific but we need so much flour as is necessary for the dough to become pliable. Grandmothers say that we need as much flour, until the dough is pliable.
Once the dough is ready, wash your hands with wine and mold in braids or in a shape you love. Place the braids on a baking pan lined with greaseproof paper.
Bake in a well preheated oven at 180 °C for 25-30 minutes.
Remove the pan from the oven and let the braids to “cool” without covering them to stay crisp.
To keep them crisp, we place the braids in a metal box.
