A great tasty creation and above all easy to prepare. I tried it the first time in Crete and really liked the combination of cheese croquettes with honey, sesame seeds and chopped almonds. That is why I named them cheese doughnuts.
You can use your favorite cheese, Mytilene cheese, or Domokos Katiki, Grevena Anevato and anything else you prefer.
I tried also the cheese doughnuts made by the students of the cooking school Etoile in Athens, and I liked them very much.

Cheese doughnuts
Ingredients
1 ½ cup grated Naxos Gruyere
2 tablespoons chopped mint
1 tbsp dill or fennel
2 eggs, beaten
250 gr soft feta cheese mashed with a fork
2/3 cup self-rising flour
Freshly ground pepper
For breading
1 cup flour for all uses
For frying
Sunflower oil
In a large bowl, mix the cheese, herbs, eggs and finally the pepper.
Sieve the flour a little and pour it in the mixture until you achieve a pliable dough.
Knead the dough into balls.
In another bowl we pour the flour and “we roll” in it the small cheese balls to bread them.
In a deep skillet, heat the sunflower well enough and with a slotted spoon pour our donuts carefully turning them for a few minutes until they become golden brown.
Remove the doughnuts and place them on a platter lined with kitchen paper.
Serve the doughnuts hot and put in the middle as a dip, yogurt sauce with tomato touches or use sweet-sour sauce.
