Italians it is said that love pasta but the Greeks were not far away also..  Fresh pasta has a unique taste and we give you the recipe of the award-winning, Nana Gampoura.
You will combine the pasta with your favorite sauces and blends of grated cheese you want.

Dough for fresh pasta

Ingredients

200 gr flour you like or all-purpose flour
2 fresh eggs
1 tsp fine olive oil

Some salt

Method of preparation

Ζύμη-ζυμαρικών-2Place the flour in a large bowl. We form a hole in the center and there we add the 2 eggs, salt and olive oil.
Beat this mixture with a small fork initially and then when you start to create the paste begin kneading by hand. We knead the dough well until it has a soft, velvety texture. We can also put the ingredients in the mixer and whisk lightly.
We then form balls with the dough and cover with food membrane for 45 minutes, for the dough to “rest”.
Roll out our dough with a pasta machine, starting from the thick setting and continuing we pass the dough by adjusting the rollers until the sheet is as thin as we like. If we do not have a machine we can use a rolling pin.
To prepare tagliatelle or lasagne we pass the dough from the cutter. If you want to create ravioli, then cut the dough into rectangular pieces and fill it with the ingredients you “love.”
Our fresh pasta is ready.
We can boil it in a large pot of salted water for 3-4 minutes and enjoy it hot on our plates with our favorite sauce and grated cheese variety.

Handmade fresh pasta is usually made with eggs and so they have a velvety texture.

Small secrets

We can use whole wheat flour or even we can flavor and color them with vegetable puree. We distinguish spinach, beetroot, sun-dried tomatoes adding a little flour.
If we want sweet creations we can even add chocolate, cocoa after deducting from the flour the quantity of cocoa.
Fresh pasta, must be kept in the refrigerator and cannot be preserved for a long time.
Often for someone who tries it for the first time they seem to be over-boiled.
