Pasteli – sesame seeds sweet of the Andros Monastery
From father Evdokimos Abbot of the Monastery of Panachrantou
500 gr thyme honey
230 gr brown sugar
625 gr walnuts finely chopped
150 gr rusks grated
80 gr sesame seeds washed and roasted in the oven on a baking sheet
20 gr Nigella sativa
Rose water
In a saucepan, add the honey and sugar.
Allow to boil for a while until they become as soft as candy that can be lifted with a wooden fork.
To see if it is ready we drip a little cool water and if it does not dissolve it is ready.
Remove from the heat and add the walnuts and grated rusks. Next we mix.
Wet our bench or table with plenty of rosewater and sprinkle sesame and nigella sativa seeds.
We pour over the mixture of honey and spread it with a rolling pin.
If the rolling pin sticks we wet it with rosewater.
We pay attention for the Pasteli to have the same thickness.
Sprinkle with a lot of sesame and nigella sativa seeds.
Leave to cool for more than two hours.
It will be ready when it is cut without braking its shape.
Cut into rectangular blocks three fingers in length.
Store in metallic cans.
