Ingredients for 8 people
3 pounds of pork neck
6 whole cloves garlic (if you want a lighter version remove the green germ)
1 tomato cut in small pieces
150 gr kefalotiri cheese (parmesan) cut into sticks
100 gr feta cheese cut into cubes
1 bunch celery chopped
2 red Florina peppers finely chopped
Sea salt
Freshly ground pepper

Eastern spice mixture
A sprig rosemary cut into pieces
For the sauce
2 tbsp thyme honey
2 tablespoons soft Dijon mustard
1 waterglass of soy oil
1 pinch turmeric
1 sprig rosemary
5 grains of allspice
1 tsp sea salt
Freshly ground peppers
You will need

Baking sheet

How to prepare
Place in a bowl all the ingredients of the sauce and let it covered for 8 hours, stirring occasionally.
Wash the meat very well and cut open with the knife.
We place on our bench a baking sheet and spread the meat.
Pour all over the surface of the meat, with salt, pepper and savory and in the center put the tomatoes, garlic, cheese, celery and the red peppers.
Fold carefully the meat in a roll and tie tightly with string to avoid opening.
Pour the sauce on the roll.
Wrap in baking sheet and cover with foil.
Put it in a baking pot and close the lid.
Bake in a well preheated oven at 180 °C for 2 to 2.5 hours. If we have a wood oven we slowly bake for 3 hours.
Shortly before the end open the lid and carefully unfold the roll out of aluminum foil and baking sheet to get color.
Serve with fried potatoes “bathed” with the Maniatiko sauce. The dream…..
