Kourkoumpinia
Ingredients:
1 packet filo pastry for sweets
1 block of butter (melted)
3 cups sugar
3 cups water
One vanilla and juice of half a lemon
How to prepare:
We start by taking a sheet (filo) that we brush with melted butter. Then we place another one on top and we brush it with melted butter too.
Start by wrapping the pastry sheets in a roll the way you see in the image (photo).
Continue the same process until we use all the pastry sheets (fila)
Arrange the rolls in the fridge to freeze the butter a little in order to cut them more easily (Approx. 15 min)
Prepare the syrup by adding sugar, water and vanilla and bring to a boil. From the moment it stars to make bubbles, boil the syrup for 10 minutes (the syrup must be cold and the kourkoumpinia hot when pouring the syrup.)
Cut the rolls into small pieces (see picture) and place in a baking pan with greaseproof paper.
Bake at 180 degrees for 15-20 minutes or until they have a golden brown color.
We pour the syrup and place on a platter. Optionally we can sprinkle some grated nuts from whichever you like.
