Chicken filled with rice in a casserole
Ingredients:
1 whole chicken
2 toothpicks
1 lemon slice
4-5 potatoes
1 garlic
1/2 glass of water
Salt, oregano, pepper
For the filling:
1 onion
1 glass rice
1 glass of water
Pine nuts
Oil for frying
Salt, oregano, pepper
How to prepare:
In a skillet lightly fry the chopped onion. Once it changes color add the water, rice, salt, pepper, pine nuts and the oregano. Allow to boil and as soon as all the water evaporates remove from the fire.
Wash the chicken well and place it in our casserole. Inside the chicken place a slice of lemon. Then we fill with our filling the inside of the chicken and some spots under the skin. Cut our peeled potatoes into cubes and put them together with the garlic, salt, oregano, if we have filling, pepper and water in the casserole. Close the back of the chicken with toothpicks for the rice to remain in place.
Bake in a preheated oven at 200 oC for 45 minutes with a closed lid. We watch the cassserole if more water is necessary and then we cook with the lid open until the chicken has a nice red color and the rice has been cooked, for about another 45 minutes.
