The festive days are approaching and we recommend a carrot cake made with stevia and filled with cream cheese Anevato from Grevena that is PDO or whatever creamy cheese you like.
Its taste sufficiently uplifting and its appearance can have festive touches.
However it is a gift welcomed by friends and relatives.
“Accompanied” with apple tea or even a “vrastari”, a blend of siderite with sage or dittany or valuable malotira. Prefer teas and Greek endemics herbs that are superfoods, they relax us and provide wellness to our bodies.
Carrot cake with stevia stuffed with cream cheese from Grevena

Ingredients
300 gr self-raising flour
2 tsp baking powder
2 tsp cinnamon grated
½ tsp cloves grated
150 ml sunflower
50 ml sesame oil
25 gr stevia
3 eggs
200 gr grated carrot
100 gr grated apple, 1 apple
100 gr chopped walnuts
40 gr black raisins
Zest of one orange without wax
4 tbsp orange juice
For the cream
500 gr Anevato Grevena cheese
½ tsp cinnamon
12 gr stevia
Zest of 1 orange
For sprinkling
Stevia powder or icing sugar
At the same time we prepare the cream.
In a bowl, mix well the Anevato cheese , the cinnamon, stevia, orange zest and orange juice and put the cream in the fridge to “stand” until we use it.
Sieve the flour and place in a bowl.
Add the baking powder, cinnamon, cloves, walnuts, raisins and mix well.
In a bowl, beat the eggs vigorously with the whisk and add the stevia, sesame oil slowly and sunflower oil, carrot, apple, orange zest and the flour mix.
Mix well until the ingredients become homogeneous.
Pass the cake tin with a little olive oil and sprinkle with flour.
Pour the dough in the form and bake in a preheated oven at 180 °C for 45-50 minutes.
Our cake should be golden brown and when we poke it, the knife must come out clean from the heart of the cake.
Remove the cake from the oven, remove it from the tin form, let it cool thoroughly and cut it with the bread knife horizontally into two parts.
Place the cake on a round platter and spread on the surface of the one piece the cheese cream with a plastic spatula and then we cover with the second piece of cake.
If we want we sprinkle the cake with stevia or powdered sugar and cinnamon.
Cut into pieces and serve.
Small secrets
If we want we serve next to the cake, carrot spoon sweet.
At Christmas we can decorate the cake with stars or balls all around the cake.
