The customary recipe of caramel characterizes the festive cuisine of Eressos. Usually we gather at our homes with friends and relatives to share the joy of participation in the preparation of this sweet. Patience and perseverance in this process of creation, is joy, is sharing
Ingredients
4 kg Sheep Milk
1 kg Sugar
Half tspn sour
HOW TO PREPARE
In a deep saucepan put the milk and sugar over low heat until it reaches boiling point
As soon it begins to boil increase the temperature and pour the sour. Continue mixing to prevent from sticking.
Once it starts to thicken and unsticks from the walls then remove from heat.
Put hot in the pan. Be careful not to leave any liquids.
Allow to cool over 3 hours, and cut into pieces of rectangular or square shape.
