In Crete, I tasted the best by Marcella in Kavousi, where recently, excavations have brought to light the interior of the Minoan house with fireplace, wine press and mill.

Almond cookies

Ingredients
700 ml olive oil
250 gr brown sugar
50 ml raki or grappa
250 ml Orange juice
150 gr almonds coarsely cut
½ tbsp cinnamon
½ tbsp baking powder
Soft flour “as much as is needed”
Method of preparation
In a glass of raki we dissolve the baking powder.
In a large bowl, add the olive oil, orange juice, raki and then stir.
Add the sugar and then cinnamon and mix well until the materials become homogeneous.
Sieve the flour and slowly add it in the mixture, stirring vigorously until you have a pliable and soft dough.
Make balls of dough and let it “rest” for 30 minutes.
With a rolling pin roll out the dough into half cm thick sheets.
Sprinkle with almonds and cut into rectangular pieces or blocks.
Spread greaseproof paper on a baking tray and bake in a well preheated oven at 200 oC for 20 minutes.
Allow the cookies to cool without the lid in order to remain crunchy.
Place them in a metal or wooden box and “hide” it in a cupboard.
