The “Politises”, as the women of the old Constantinople are called, “made” it very often. Because most of their dishes had a sweetish taste this salad gave harmony.
Goes very much with roast meat on the oven and grill as well as with fish. It is one of my favorite salads and Spiros’ salad, a friend of emvolos.gr who made it for us, was sufficiently refreshing … enjoy …
Politiki Salad

Ingredients for 4 people
1/2 medium size cabbage
2 carrots
1 Florina pepper pickle
1 bunch celery leaves only
2 cloves garlic, minced without the green sprouts
Sea salt
1 tbsp wine vinegar
Juice of 1 lemon
50 ml olive oil
Wash the cabbage, keep some nice leaves to serve with the salad and chop the rest.
Put the cabbage in a bowl and add the garlic and all our other ingredients finely chopped.
Marinate our salad with the vinegar, lemon juice and olive oil, mixing with our hand.
Place the bowl covered in the refrigerator to cool our salad and for the flavors to emerge.
After 15 minutes remove from the refrigerator and serve in a shallow dish into the fine leaves of cabbage that we kept.
Decorate with leaves of parsley and chopped red pepper
